A rare plant, the sego lily has white, lilac, or yellow flowers and grows six to eight inches high. The
soft and bulbous root is edible as well as all the other parts of the plant including the
flower. Mormon pioneers learned to dig and eat the sego lily when they first came to the Salt
Lake Valley and food was scarce. It is the official floral emblem of the state of Utah.
